Ahhh – it is finally fall! Cooler temperatures, warmer clothes and shorter days. Everything about this time of year makes us yearn for being comfortable and cozy. Although the idea of “comfort” rarely makes us think of health, if you play it right you can create simple, healthy meals that will make the house smell delicious and require little clean-up. Here are some of my favorite fall one-pot meals:
Mexican Quinoa Casserole

ost of the ingredients for this meal are shelf stable, making it makes a great quick meal to throw together in a pinch or have on hand when you come back from vacation. It is a simple and delicious vegetarian meal on it’s own but you can also use it as a side for fajitas or pack it with even more veggies to dress it up a bit. And it has AVOCADO MOUSSE! I’ll just leave you with that.
