Summer Gazpacho Recipe

7 each Vine Ripe Tomatoes (or heirloom tomatoes)
2 each  English Cucumber, peeled
2 each  Lemon, juiced
1 each  Red Bell Pepper, seeded
6-8 ea  Garlic Cloves, peeled
4 oz     Sherry Vinegar
2 tsp    Sea Salt (add more to taste)
1 tsp    Cracked Black Pepper

Place the first 5 items in a blender and puree until well incorporated.  Add the vinegar and salt & pepper to taste.

This summer soup is served cold, it is packed with vitamins and minerals, and it is ultra-low in calories!  As a bonus you can make it in less than 10 minutes!  The flavors intensify as it sits.

We use this recipe as a delicious base to other things:

ADDITIONS:

Cilantro | Jalapeno/Serrano | Lime Juice
Basil | Thyme | Pre-Roasted Garlic
Thai Chili | Thai Basil | Curry Powder

Or use it as a super-healthy bloody mary mix… well “healthier”, if you are going to have a cocktail, it should be natural!  You will thank us later!  Remember, no vinegar if you plan on going this route, and you may want to tone back the garlic!

Vodka | Horseradish | Worcestershire (no vinegar in this one), garnish with veggies
Vodka | Your Fav Hot Pepper Sauce or Jalapeno (no vinegar in this one), garnish with veggies
