One of the biggest challenges for a busy person is eating on the go. I find that quick and tasty trail mixes are an excellent choice for a balanced and portable snack. There are some excellent options for pre-made and pre-packaged snacks at your local grocery store. Check out Planters “NUT•rition” convenience packs or Trader Joe’s “Just a Handful of Almonds, Cashews & Cranberries.”
You can make your own trail mix that is just as delicious, but less expensive than the store bought. I’ve listed a few of my own recipes to get you started. Don’t forget, using reusable sandwich bags is an eco-friendly way to store your mix. As always, serving sizes are important so a ¼ cup snack is my recommendation.
Tara’s Simple & Savory Trail Mix
1 cup unsalted almonds
1 cup unsalted walnuts
1 cup salted sunflower seeds
1 cup dried, unsweetened cranberries
Combine ingredients and separate into ¼ cup servings.
Sweet Cinnamon Clustered Trail Mix
4 cups quick cooking oats
6 tablespoons honey
4 teaspoons cinnamon
1 cup salted soy nuts
½ cup sliced almonds
½ cup dried cherries
½ cup dark chocolate chips
Mix honey and cinnamon into oats and form dime-sized clusters. Spread on a baking sheet and bake for 5 minutes at 275°F. Toss with remaining ingredients and separate into ¼ cup servings.
Peanut Butter Pretzel Trail Mix
2 cups mini pretzels
1 cup unsalted peanuts
1/3 cup yogurt chips
1/3 cup peanut butter chips
1/3 cup dark chocolate chips
Combine ingredients and separate into ¼ cup servings.
