Grilled Mango Recipe

June is National Mango Month! Mangos are absolutely delicious no matter which way you slice them (pun intended!), however my favorite way to enjoy them is lightly grilled. Here is a quick and easy recipe that is sure to be a crowd pleaser at your next summer barbecue.

Ingredients:

2 ripe mangos
Juice of ½ an orange
2 tablespoons honey
Pinch of cayenne pepper

Makes 8 servings

Directions:

Slice each mango into 4 large portions, keeping the skin on, but taking out the pit. Use your knife to cut a crosshatch pattern on each slice, making sure not to cut through the skin. Place the scored slices on a medium heat grill cut side down and cook for about 2 minutes.

Mix the juiced orange, honey and cayenne pepper in a small bowl. Remove the mangos from the grill and brush the glaze onto the cut sides. Return to the grill, cut side down and cook for an additional 30 seconds.

Remove from the grill. When the mangos have cooled, turn them inside out so the cooked mango pulls away from the skin. Serve and enjoy!

And remember, a few small steps can lead to big changes.
