Family Snacks on the Go!

August is Family Fun Month! It is the time of year when we are enjoying our summer vacations, spending days at the pool and trying to soak up all that summer has to offer! However, when we aren’t in the comfort of our own home it can become a little tricky to make healthy and economical snack choices for our family. Here are a few of my favorite healthy and delicious snacks for on- the-go!

Dark Chocolate & Nut Clusters

2 cups almonds
1/2 cup dark chocolate chips
1/2 teaspoon sea salt

Melt dark chocolate and sea salt in a medium saucepan over low heat (about 4 minutes). Add almonds into the pan and stir to coat. Pour the mixture onto a cookie sheet lined with wax paper and refrigerate for 30 minutes or until firm. Break into 1-2 inch clusters. Makes 12 servings.

Spicy Oven-Toasted Chickpeas

1 15 ounce can chickpeas (garbanzo beans) – drained
1 tablespoon extra virgin olive oil
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon sea salt (fresh cracked)
1/4 teaspoon granulated garlic
1/4 teaspoon black pepper (fresh cracked)
Zest from one lime

Preheat oven to 400 degrees.
Mix all of the spices (set aside lime zest for later).
In a large bowl, toss the chickpeas in olive oil and season well with seasoning mix. Spread evenly on a cookie sheet/jelly roll pan lined with foil. Save the mixing bowl for a later step.
Toast the chickpeas in the oven for 30 minutes. Remove and pour into the mixing bowl. Add lime zest and toss again.
Spread evenly on the cooking sheet and place back in the oven for 5-10 minutes.
Remove from oven and pour mixture onto a paper towel lined plate or pan to cool.
Keep at room temperature for up to three days.

Frozen Grapes

Frozen grapes are a healthy and refreshing option that is great for the pool! They are also great to pack in the cooler because they will act as ice and keep everything else nice and cool.

Hummus Deviled Eggs

1 hard-boiled egg
2 tablespoon roasted red pepper hummus

Slice the egg in half. Remove the yolk and fill with hummus. You can place the egg back together for easy transport!

Chocolate Hazelnut and Banana Wrap

1 whole wheat tortilla
1 sliced banana
1 tablespoon chocolate hazelnut butter

Spread the hazelnut butter on the tortilla. Top with the banana slices and roll up. Wrap in plastic wrap and you are ready to go!

Making sure that you have a bag full of enjoyable snacks is one of the best ways to keep your family happy and healthy on the go! And don’t forget to also make some delicious Salada Iced Green Tea to take with you in your cooler.

And remember, a few small steps can lead to big changes.
