5 Quick & Healthy Sheet Pan Recipes for Winter

Winter cooking needs to be delicious and it needs to be easy.  In fact, overestimating our time and capacity is the main thing that causes us to spiral during the holiday season.  We hold ourselves to the same standards as the rest of the year and when we don’t meet them, it all comes crashing down in a pile of leftover Halloween candy and spoiled groceries.  Coming up with an arsenal of easy meals is the key.  Here are 5 of my favorite sheet pan recipes using seasonal ingredients:

Chicken with Sweet Potatoes, Apples & Brussels Sprouts

This recipe has the perfect flavors of the winter months and uses ingredients that will be easy to find and packed full of nutrients.  Erin also shares a skillet version if you are more stove-top than oven.  Both are delicious and guaranteed to make your house smell incredible.

Garlic Butter Salmon

If your mouth started watering at garlic + butter, you are not alone.  The sauce that Chungah created feels so decadent yet uses simple ingredients that you most likely already have in your kitchen.  Perhaps more importantly, it locks in the natural moisture and flavor of the salmon.  If you are trying to expose picky eaters to fish, this is a good one to try!

Shrimp Fajitas

These fajitas take the “one pan” to a whole new level by warming the tortillas on the same pan. The recipe uses fresh shrimp and vegetables, but you could also use frozen shrimp and frozen stir fry vegetables making it a great back-up meal for when you don’t make it to the grocery store.

Pork Tenderloin and Veggies

One of the best parts of a single pan or pot meal is that it allows the flavors of all the ingredients to come together.  Mila does a great job with this and allows the juices from the tenderloin to act as a marinade for the vegetables.  She also encourages you lay the tenderloin on the green beans allowing the potatoes to crisp to perfection.  Genius!

Roasted Gnocchi and Brussels with Myers Lemon Vinaigrette

This vegan dish is as simple as it is delicious.  It combines the light flavor of Meyer lemons with hearty gnocchi.  The recipe calls for traditional gnocchi, but if you are on the Trader Joe’s cauliflower gnocchi train you can substitute that as well.  This dish stands alone as a meal and can also be a side to a holiday dinner.
