
I had some of the bars I packed on the plane but by the time I landed and made it to my hotel I was famished. As luck would have it my hotel is right next to a Wild Oats. What are the odds? So I went over there and grabbed some stuff to make a sandwich and have some snacks later on. With thick baguettes, I like to hollow out the inside. It makes a nice place for the contents to sit and is helpful if you are trying to cut down on carbs. If you aren't cutting down on carbs than you should not do this. Yours truly, Captain Obvious.
I paired the sandwich with a peach and some flax tortilla chips.
